2017 – You are kidding
Well here we are in 2017. Can’t quite wrap my head around it. Over the last year many of my friends turned 70 and more will do so this year, I am just around the corner. It’s a milestone for sure. I don’t think of it being my generation but rather the generation before me. Not sure how we got here but here we are. It’s not that bad actually, I feel young and strong and really quite happy about it all.
Believe me, having a four month old puppy keeps you young. However you do need to have the motivation and the energy to deal with a young’un like that. He is full of energy and gets us out of bed each and every morning. Do I mind? No, actually I don’t, somehow it gives me a reason to get up each day and greet it the way he does. Starving!? Well no, but certainly with an enthusiasm that was lacking before his arrival. He thinks each day is wonderful and an opportunity to act joyful about all around him. You know what, he is right!
South Carolina or Bust
We are back in South Carolina. It is not warm here but it is warmer than Canada for sure. We left with beautiful cold weather but knowing that a storm was coming. Some how we lucked out and bypassed the storm, it was east of us and we took the western route. Dry roads and no snow all the way. We did see a few negative results of the weather as we drove south, a couple of 18 wheelers in ditches for example but for the most part nothing much. We had dry roads and blue bird skies. The only complaint was the sun was too bright. We left with 8F and arrived at 43F not a bad differential. Not too worried about slipping on the ice down here. However, important to keep your eyes open. You never know.
Tried a new recipe
I love pizza so when I saw a recipe that said this is pizza without the guilt I thought I would try it. Am not a cook so I make lots of mistakes and this recipe was no exception. I goofed all the way through it. However, it still worked out and it’s worth trying. I made lots of mistakes but you don’t have to. I already did.
Zucchini Pizza Bites
Two good sized zucchinis
Cherry tomatoes
Parmesan Cheese
Spices
garlic
olive Oil
cut the zucchini in half
brush with olive oil and garlic mixed
layer tomato slices on the zucchini
mix grated Parmesan with oregano, thyme and basil
spinkle on top of zucchini and sliced tomato
bake in 375 oven for 20 minutes
enjoy guilt free!!!
